Yes you need a roux. It thickens the sauce. It is made from melted butter and flour. Mac and cheese is just cooked mac noodles and cheese sauce. It couldn’t be more simple.
Here is a basic cheese sauce recipe:
INGREDIENTS
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1 cup milk
* 1 cup shredded cheese, such as cheddar or swiss
* Salt and pepper to taste
Melt the butter in a medium saucepan over medium heat. Stir in the flour, being sure to combine it with the butter very well, to make a roux. Let cook, stirring constantly, for about 2 minutes. Do not let it darken. Gradually add the milk, about 1/4 cup at a time, whisking or stirring vigorously to incorporate. Cook over medium-low heat, stirring often, until thickened and just starting to boil, about 10 to 15 minutes. Add the cheese and stir until melted. Taste for seasoning and add salt and pepper as desired.
Notes: For a thinner sauce, add a little more milk. For a milder cheese flavor, add less cheese. Add other seasonings as desired.
Note: Velveeta, while easy to work with, is a highly processed cheese and is not very healthy. Use whole cheese and make the sauce from scratch. It will not only be healthier, but it will taste better also.

LikeDislikeBoil 1lb elbow noodles till done, drain. Add velvetta cheese. I use the 1lb box but can go by how cheesy you want it. Add a splash of milk and melt together. Add some ham to it and yum yum!

1 8oz. box of elbow macaroni, cooked
and drained
1/4 stick butter
1 cup sharp cheddar cheese, grated or half a block of velveta
Prepare macaroni by directions on box and
drain well. Place macaroni in saucepan and
and butter and cheese. Stir until melted and
serve.
I also reccomend having little smokies with it! I actually had this for dinner last night!!!!!
If you want, add salt and pepper.

LikeDislike8 ounces uncooked medium pasta shells
1 pound processed cheese(Velveeta)cubed
2 tablespoons ketchup
1 tablespoon of mustard
1/4 cup milk
cook pasta according to package directions.remove water.
Meanwhile in a microwave safe bowl,combine cheese and milk.
Cover and microwave on high for 2 min ,stir.
Heat 1-2 min longer or until smooth .
Stir in ketchup and mustard .
Add that all to you pasta and stir again until well blend.
Enjoy.I love this mac and cheese.

LikeDislikeMelt stick of butter, add 3 tablespoons of flour to make a roux on the stove. Then add 1 evaporated canned milk (is the best) and 1 can of water. Cook these items on low until it comes to a little boil. Stir with a wire wisk.
Put 2 cups shredded sharp cheese into the sauce. Melt and stir. Add salt and pepper to taste. Next, add 1/2 tsp. of powered mustard, it gives it a little bit of a kick. Continue to cook for 5 minutes on low.
Cook 1 package (2 to 3 cups) of elbow macoroni. After it is boiled and drained transfer noodles into 9×13 Oblong Baking Dish. Pour sauce over the noodles.
Finally, take crushed bread or cracker crumbs over the top of the mixture. Add 3 dabs of butter over the top of the cracker crumbs.
Bake at 350 for 30-35 minutes. This recipe rocks!!

LikeDislikevelveeta is four different cheeses ,grated and mixed with cream ,minimally processed and very healthy and a natural for mac -n-cheese .so melt it with some milk and pour over cooked elbow macaroni,then enjoy
