Aristotle. His theories on math, physics, and logic were so ahead of his time that they not only influenced but sometimes dictated the work of mathematicians, chemists, and physicicst for centuries to come.
Music:
This is a matter of personal preference, but I’ll go with Mozart. For such a short lifespan, he was an immensely prolific composer. While some may prefer the different styles of music, very few other composers can match the artistic and technical brilliance of Mozart’s composition.
Engineer:
Archimedes. If he were alive today, he’s probably be the record-holder for having the most patents. He discovered the principle of buoyancy just by taking a bath. He made many achievements in geometry, such as developing an algorith to approximate the circumference of a circle. He designed terrifying war machines (not even counting his apocryphal “death ray”) which almost single-handedly defended the small island of Syracuse from the might of the Roman Empire for two whole years.
